Green from three farms, roasted to order in small batches. Saturday mornings we open the doors for a cupping flight, ten seats, one table, no rush.

How the class works

Smell, slurp, score, talk

We line up spoons, pour ten cups and taste them together. No wrong answers, just words for what's in the cup. It's how we name every bag on our shelf.

  1. Smell

    Nose in the cup before a spoon touches it. Fruit, nut, char — we write down the first thing that comes to mind.

  2. Slurp

    A loud slurp sprays the coffee across your whole tongue. It feels silly for about thirty seconds, then it doesn't.

  3. Score

    We score body, acidity and finish on a shared sheet, table by table, cup by cup.

  4. Talk

    We compare notes out loud. Someone says 'stone fruit,' someone else says 'walnut' — both go on the tag.

Ten seats, one flight, every Saturday

We set out ten spoons each Saturday morning and cup whatever's fresh off the drum that week. Pull up a stool, we'll pour the water.
